 Gujarati Dal’s Secret Recipe from Grandma’s Cookbook

For Dal:

  • ½ Cup Rentio Toor Dal (rinsed)
  • 1 ½ Cup Water
  • 1 tsp Oil
  • 2 tbsp Peanuts
  • 1 tsp Ghee/Butter
  • 1 tsp Mustard
  • ½ tsp Cumin Seeds
  • 1 Chili
  • Pinch of Hing
  • Few Curry Leaves
  • 1 Tomato (finely chopped)
  • 1 tsp ginger garlic paste
  • 1 ½ Cup Water
  • ¼ tsp Turmeric Powder

For Dhokli:

  • ¾ tsp Kashmiri Red Chili Powder
  • ¼ tsp Cumin Powder
  • ½ tsp Coriander Powder
  • ¼ tsp Garam Masala Powder
  • Small Piece Jaggery
  • 1 tsp Lemon Juice
  • 2 tbsp Coriander (finely chopped)
  • Salt (to taste) For Dhokli:
  • 1 Cup Wheat Flour/Atta
  • ¼ tsp Turmeric
  • ½ tsp Kashmiri Red Chili Powder
  • ¼ tsp Ajwain / Carom Seeds
  • ½ Cup Water
  • 2 tsp Oil
  • Salt (to taste) Method

Method

For Dal:

  1. Soak Rentio Tuwar Dal for around 2 hours. Once soaked, pressure-cook dal for 5 whistles with enough water added along with oil and peanuts. You can boil peanuts separately by putting a bowl inside the cooker.
  2. Whisk the dal well until it turns into a creamy texture.
  3. Heat a large pan and add 1 tsp ghee to it. Allow 1 tsp mustard seeds to splutter then add ½ tsp Cumin, 1 Chili, a pinch of Hing and a few curry leaves.
  4. Now add 1 tomato, ginger-garlic paste and sauté until tomatoes turn soft and mushy.
  5. Add cooked and smoothened dal to the pan and mix well. You can add water to adjust the consistency.
  6. It’s time to add the dry ingredients now. Add turmeric, chili powder, cumin powder, and coriander powder and Garam masala to the pan and mix well.
  7. Add cooked peanuts to the pan and boil it for 1 minute or until you see the flavors absorbed.
  8. Lastly, add a small piece of jaggery, salt, and lemon juice. Now let the dal simmer for a few more minutes.

For Dhokli:

  1. Take a large mixing bowl and add 1 cup wheat flour, turmeric powder, chili powder, Ajwain, salt, and oil.
  2. Combine the ingredients well and knead the dough by adding water as required.
  3. As the dough turns soft and smooth, take the ball-sized dough and roll it with the rolling pin by dusting wheat flour as required.
  4. The consistency should be even and slightly thick.
  5. Once rolled well, cut the flatbread into diamond shapes of medium size.
  6. As the dal is brought to boil, drop the Dhokli pieces and mix well. Make sure that you mix it lightly.
  7. Cover the pan and boil for 10 to 15 minutes for the Dhokli to get properly cooked.

Hot and tempting Dal Dhokli is ready to be served with chopped coriander leaves garnishing.
